Recipe For Your Health

Do you ever feel lethargic?  Worn down?

Balancing my career, my family and my hobby, there are times when I don’t take care of myself.  When the weekend finally comes, I don’t tend to slow down and relax.  Rather, I try to get everything accomplished that I was not able to during the week.

Eating and exercising don’t go hand in hand with my schedule.  So, I found myself looking for an alternative.  What could I do differently to maintain my weight and keep myself energized?

Here is a recipe that I use (frequently) to keep myself going without filling up on unnecessary carbs.

I don’t actually have a name for it.  It is a soup with a variety of ingredients that are good for your health.

  • 2 Tbsp Ginger sliced thin (and small)
  • 2 Tbsp Garlic diced
  • 2 Tbsp Olive Oil
  • 1 medium onion sliced thin
  • 1 Leek (washed, cut in half and then julienned)
  • 2 squares Chicken Stock (the real stuff– I like the Knorr brand.  It is real chicken fat rather than the dehydrated sodium cubes)
  • 1 large Portabello Cap
  • 2 Qts Water

Sautee the Ginger, garlic, and onion in olive oil for about three minutes (stirring frequently) on med-high heat.  Do not caramelize onions as it will change the flavor of the broth.  Add the rest of the ingredients and bring to boil.  Reduce to half and then serve.

If you like turmeric (which is good for joint health), you could add 1 tsp without overpowering the flavor.

To each their own when it comes to flavor, but I love this recipe.  It makes enough for several helpings.  It is filling but not full of calories and carbs.
