In celebration of National Grilled Cheese Day, I wanted to share a recipe with you that I really like.
Grown Up Grilled Cheese
1 serving
2 portobello mushroom caps, halved and broiled until soft
sweet onion, thickly sliced and caramelized
1 tablespoons cream cheese
1 tablespoon ricotta cheese
2 ounces fresh mozzarella cheese
2 slices crusty bread brushed with olive oil
If you haven’t tried it—you should.
As a side note: Bacon goes well with this too!
